Lauki Halwa is a traditional, simple, quick & healthy dessert. It is also known as doodhi halwa or bottle gourd halwa. This  mouthwatering & creamy sweet dish mostly prepared during fasting days like Navaratri/ Shrawan.

Lauki Hawla is a quick & easy home made sweet. The main ingredients are lauki, milk, sugar, cardamom & dry fruits.

Ingredients:


2 cups grated lauki (bottle gourd/doodhi)
3 cups milk
1/2 cup sugar
1 tsp cardamom powder
3-4 cashew nut chopped
3-4 almond chopped
1 tbsp ghee

Method:


1. Heat ghee in a pan, add grated lauki & saute for 5 mins

2. Add milk, bring it to a boil, simmer for 30-35 minutes, stir occasionally.

3. When halwa is almost dry, add sugar & mix well.

4. Stir till the moisture has evaporated.

5. Add cardamom powder, cashew nut, almond & mix well.

6. Transfer to serving bowl, garnish with almond & cashew nuts.

7. Serve hot or cold as desired.

Sabudana kheer is very delicious, creamy, thick, aromatic & healthy dessert mostly consume during fast/vrat like Shravan or Navratri. It is easily digestible & provides instant energy.


Sabudana Kheer


Sabudana Kheer also called Sago Payasam. This dish is easy to cook. Sabudana combined with milk, nuts, sugar & lightly flavored with cardamom & saffron.


Ingredients:


1/3 cup sabudana (sago)
3 cups milk
3 tbsp sugar
2 tsp sliced pistachios
4-5 almond chopped
4-5 cashew nut roasted & chopped
Few strands of saffron
1/4  teaspoon cardamom powder

Method:


1.  Wash & soak sabudana in about 1/3 cup of water for at least 2 hour. Sabudana 
      will soak up most of water, become light & fluffy.

2. Boil milk in heavy bottom pan for 8-10 minutes.

3. Add sabudana & cook until it is soft & has become translucent.  

4. Now add sugar, cardamom, saffron & boil for 2-3 minutes. 

5. Add chopped cashew nuts & almond. boil for 2-3 mins. Turn off heat. 

6. Transfer kheer in a serving bowl, garnish with saffron, cashew nuts, almond & pistachio.

7. Serve hot or chilled as desired.
