Rasgulla is a very popular Indian dessert... Rasgulla is a syrupy, soft, spongy, sweet is loved by all. These melt in mouth, lovely looking pearly white balls made from chhena/paneer  (Indian cottage cheese) & dipped in cardamom flavored sugar syrup. A perfect dish to offer goddess Lakshmi on this Diwali.

Ingredients:


!/2 liter milk
1/2 tbsp lemon juice
2 cups water 
3/4 cup sugar 
1/2 tbsp cardamom powder or rose water
3-4 pistachios finely chopped for garnishing

Method:


1. In a heavy bottom pan boil the milk.

2. When milk starts boiling, add lemon juice gradually, keep stirring gently till whey
    water clears & milk curdles completely.

3. Now drain whey water using a strainer or muslin cloth.

4. Gather muslin cloth from the sides, rinse it under cold water & squeeze well.
    This process will remove the sourness of lemon from chhena/paneer

5. Squeeze excess water from the paneer, hang it aside for half an hour without
    disturbing it.

6. Take out the paneer in a bowl, it would be crumbly in texture. Knead it well for
    4-5 mins or till paneer is smooth & free of lumps.

7. Divide the paneer into equal portions, make small smooth ball of each portion.

8. To prepare sugar syrup, heat water in a wide bottomed pan, add sugar, cardamom
    powder/rose water & keep stirring till sugar dissolves completely. 

9. When sugar syrup starts boiling, put paneer balls into it gently, let it boil for 7-8 mins.

10. Switch off  the heat, keep rasgullas in the sugar syrup for 10-12 mins. Rasgullas will
      be double in volume while cooking in the syrup.

11. Refrigerate the rasgullas, garnish with chopped pistachios & serve.

Motichoor Laddu is a treat for both eyes & taste buds. Motichoor Laddu is a very popular Indian dessert, a must for all Indian festivals & celebrations. This mouthwatering dish made from gram flour, deep fried in pure ghee, dipped in sugar syrup & mixed with sliced nuts, the out come is a cute pearly orange ball.....which is soooo delicious in taste & perfect for this festive occasion.

Ingredients:


1 cup gram flour
1 cup sugar
4-5 almonds chopped
4-5 pistachio chopped
10-12 rose petals
1/2 tsp green cardamom powder
1 tbsp ghee
5-6 saffron strands 
1 pinch orange food color
Ghee to deep fry 
Water as required

Method:


1. Sieve gram flour, add ghee, food colour & mix well, now add water to make a
    batter of thin consistency without any lumps. Keep batter aside for some time.

2. In a pan add sugar, water & boil it, once sugar dissolves completely, boil it on
    low flame with continues stirring, till sugar syrup reaches one string consistency.

3. Turn off flame, add cardamom powder, saffron to sugar syrup, mix well, keep it
    aside.

4. Heat ghee in a pan, take a greased boondhi ladle, pour boondi batter over it &
    rub batter gently on the ladle with a spoon, so the small drops of batter ( boondi)
    drop in ghee.

5. Fry boondi till they become golden, remove on a tissue & add them immediately
    to the sugar syrup.

6. Repeat the same with remaining boondi batter.

7. When boondi absorb all sugar syrup, add chopped pistachio, almonds, melon seeds
     to the boondi & mix well.

8. Divide boondi mixture into small portions, shape each into a laddu.

9. Garnish with chopped almond, rose petals.

10. Tempting motichoor laddu are ready to serve.

Lauki Barfi (also known as Doodhi Barfi, Lauki Ka Lauj, Ghiya Barfi,Bottle Gourd barfi/fudge) is a sweet dish mainly eaten as a fruit diet on fasting days like Navratri, Shravan, Janmashtami. Lauki Barfi is simple to cook, fibrous & nutritious.

Navratri is round the corner ..... Lets make this delicious & healthy Lauki Barfi, which you can use during this Navratri ...... i am sure you will love it.


Ingredients:


2 cups bottle gourd/lauki grated
1 cup milk
100 gms khoya/mawa
1/2 tsp cardamom powder
1 tbsp cashew nut chopped
1 tbsp almond chopped
1 tbsp ghee 
Sugar to taste

Method:


1. Heat ghee in a pan, add grated bottle gourd/lauki & cook for 2-3 mins.

2. Now boil milk in a heavy bottom pan, add bottle gourd.

3. Stir & cook it till milk reduces to half .

4. Add khoya, mix well, cook it again till all milk evaporates.

5. Add sugar, cardamom powder, mix well & cook till it become 
   completely dry.

6. Take a big try & grease it with ghee, transfer the barfi mixture in it.

7. Spread mixture evenly in try, garnish with chopped almond, cashew
    nut & let it cool completely.

8. Cut into desired shape & serve.

9. Lauki Burfi is ready for Navratri.

hot days of summer, during 
fasting days like Navratri to keep you hydrated or as breakfast/
evening drink.

Apple milkshake is an easiest milkshake that can be prepared in no time. Best served
when fresh & 
chilled. The main ingredients are milk, apple, honey, almond but you can
make variations according to 
your choice & taste.

Ingredients:


2-3 apples   
2 glasses of milk  
6-7 almond soaked 
2 tsp honey
Ice as required
2 tbsp apple chopped for garnishing

Method:


1. Peel skin of apples, chopped into small pieces.

2. Soak almond in hot water for 15 mins.

3. In a mixer jar add milk, chopped apples, soaked almonds, honey & ice.

4. Blend it till smooth.

5. Pour apple milkshake in the glasses.

6. Garnish with chopped apple & serve chilled.
