Shrikhand
Shrikhand is a yogurt based extremely popular indian sweet dish, but now it is popular all over the Indian subcontinent. Made from yogurt shrikand has a creamy, semi soft consistency & is slightly yellowish in color.

It is one of the main desserts in Maharashtrian & Gujarati cuisine. Preparation of this dish is very simple. there are so many variation available in shrikahnd like kesari, kesar pista, mango, strawberry etc. A popular variation of shrikhand in Maharashtra is Amrakhand, which is shrikhand blended with mango pulp.
Ingredients:
1 kg yogurt
10-12 strands of saffron (kesar)
2 tbsp milk
5-6 almonds finely chopped
5-6 pistachios finely chopped
5-6 cashew nuts finely chopped
1/2 tsp green cardamom powder
1/3 cup sugar
Method:
1. Hang yogurt in a muslin cloth until all liquid from yogurt has drained off.
(Approximately 3 hours). Soak saffron in milk. Add sugar in yogurt & mix will.

2. Now transfer thick yogurt along with sugar over muslin cloth, in small quantities.
3. Rub above mixture firmly over cloth, till whole mixture is sieved.
4. Add saffron in sugar mixed strained curd & mix well.
5. Transfer it to a glass bowl. Add almonds, pistachios & green cardamom powder
& mix well.

6. Refrigerate prepared shrikhand for 2-3 hour.
7. Garnish it with almonds, cashew nuts & serve chilled.
