Rasmalai is a very popular, royal & delicious dessert, spongy rasgullas soaked in creamy, sweetened saffron & cardamom flavored milk, garnished with nuts. 



Instant Rasmalai


Instant Rasmalai can be made easily at home in minutes by using ready made rasgulla & thickened milk. You just need to boil the milk, add rasgullas, sugar, nuts in it ......melt in
mouth instant rasmali is ready 
to serve.


Ingredients:


12-15 ready made rasgullas
1 liter milk
5-6 almond chopped
5-6 pistachios chopped
7-8 strands of saffron soaked in milk
1/2 tsp cardamom powder
Sugar to taste

Method:



1. Take ready made rasgullas in a bowl, drain excess syrup by pressing
    each
 rasgulla gently.

2. Heat milk in a heavy bottom pan.

3. When milk comes to a boil, reduce the flame to low & cook till milk
    reduces to half. Stir at regular intervals in between.

4. Now add sugar, cook till sugar dissolves.

5.  Add saffron, pistachio, almond, cardamom powder & cook for another
     5-6 mins.

6. Turn off the flame, add the milk to drained rasgullas.

7. Let it cool to room temperature, place it in refrigerator for 2-3 hours.

8. Transfer the rasmalai into a serving bowl.

9. Garnish with chopped almond, pistachio & saffron. 

10. Instant Rasmalai is ready to serve.

Christmas is incomplete with out Santa Claus, specially for children, who brings a bag full of gifts & lots of joy for them. By preparing these Santa Cup Cakes you can make this festive season extra special for your little ones.

Kids would love these cute Santa Cup Cakes. This cup cakes are prefect for this Christmas season.This recipe would surly brings smile on your kids face.


Ingredients:


For cup cake:


11/2 cup fine lour
3/4 cup sugar
1 tsp baking powder
1/2 tsp baking soda
1 cup yogurt
1 tbsp milk
1/2 cup unsalted butter
1 tsp vanilla essence

For icing:

1/2 cup unsalted butter
1/2 - 3/4 cup cream 
2 cups powdered sugar
2 tsp vanilla essence 
2-3 drop red food color
8-10 black sugar balls


Method:


For cake:


1. Preheat oven to 180 deg C.

2. Sieve fine flour, soda & baking powder in a big bowl.

3. Add yogurt, sugar in another bowl & mix till sugar dissolves.

4. Now add butter & vanilla essence to yogurt mixture & mix well.

5. Add fine flour mixture to yogurt & mix well.

6. Fill your cupcake liners 2/3 full. Place them in preheated oven for 
    15-20 minutes.

7. Once baked take them out & allow them to cool down completely.

For icing:


1. In a big bowl combine all the ingredients for icing, whisk them till they
    are creamy.

2. Now divide this mixture into 2 potions.

3. add red food color in one, pink food color in second & mix well.

4. First brush your cake with 1 tbsp milk .

5. Apply red icing paste on upper side to make the Santa's cap.

6. Now cover the mid portion of cup cakes with pink paste to make Santa's face & nose.

7. Apply white icing paste to make Santa's beard, moustache &
    eyebrows.

8. Now make Santa's smile with red paste.

9. In the last stick black sugar balls to make eyes.

10. Cute Santa cup cakes are ready.

Pancake is a flat cake, often thin & round in shape. They are served with a variety of topping/fillings including jam, fruit, syrup, cheese cream, chocolate etc. Cinnamon
pancakes a popular one.

Cinnamon pancake is a simple, delicious & common breakfast dish. Savor the sweet
hints of vanilla,
 warmth of cinnamon, the perfect breakfast!


Ingredients: 


1 cup all-purpose flour
3 tbsp sugar
1/2 tsp cinnamon powder 
1/2 tsp baking powder 
250 ml milk
1 tsp vanilla essence
Butter/oil as required
Salt to taste

Method:


1. In a bowl, combine fine flour, sugar, baking powder, cinnamon & salt.

2. In another bowl combine milk, vanilla essence, mix well. Now mix dry 
    & wet ingredients together, take care that no lumps are formed & make
    a 
batter like consistency.

3. Heat a pan, spread some butter/oil on it, now pour one tbsp of batter 
    on it & spread evenly in round shape with the help of spoon.

4. Cook from both the sides till light brown. Repeat the same process 
    with remaining pancake batter.


5. Cinnamon pancakes are ready, serve with desired topping.

Kala chana Masala (Black Chickpeas Curry) is a very delicious, healthy & spicy North Indian curry/dish. Kala Chana is also known as Bengal gram. Kala Chana (black chickpeas) is an excellent source of protein. 


Kala Chana Masala


Ingredients:


1 cup kala chana (black chickpeas)
1 onion chopped 
2 tomatoes chopped
1/2 tsp cumin seeds
1/4 tsp turmeric powder
1 tsp red chili powder
1/2 tsp garam masala
1/2 tsp chana masala
1/4 tsp asafoetida
1 tbsp coriander leaves
1/2 tsp coriander powder
2-3 green chili chopped
1/2 tsp garlic chopped
Pinch of soda bicarb
1 tbsp oil
Water as required
Salt to taste


Method:



1. Clean & soak chana (black chickpeas) in enough water over night.

2. Pressure cook black chickpeas with water & soda bicarb till done.

3. Heat oil in a pan, add cumin seeds, crackle them, add asafoetida, 
    chopped onions. Saute onions till onion become light golden.

4. Now add garlic, green chili & saute for another 2-3 sec.

5. Add tomatoes & cook till done.

6. Add red chili powder, turmeric powder, coriander powder, salt &
    cook  for 2-3 mins.

7. Add cooked black chick peas, garam masala, chana masala, some
    water, mix well & cook for 3-4 mins.

8. Transfer them in a serving bowl, garnish with coriander leaves,
     serve hot with roti/rice/paratha.

Peda ..... word is a symbol of celebration among Indians. A huge variety of pedas are there & "Kesar Peda" is one of them.Kesar Peda is a delicious recipe with flavor of saffron, cardamom richness of mawa & sweetness of sugar. Kesar Peda is a very easy & quick recipe can be prepared in mins. A perfect sweet dish for this Diwali.

Ingredients:



500 gms soft mawa

200 gms powdered sugar

1/2 tsp cardamom powder
1 tbsp chopped pistachios
1 tsp strands of saffron
1 tbsp warm milk

Method:


1. Heat mawa in a pan, add sugar & cook it till become soft.

2. Soak saffron in warm milk.

3. When mawa is thick, add cardamom powder, soaked saffron,
    mix well & cook for 5-7 sec.

4. Transfer it in a big bowl & allow it to cool.

5. When the mawa is cool enough, divide it into small equal portions
    & shape each portion into ball.

6. Press balls with a peda mold or with palm. Let them cool down.

7. Garnish with chopped pistachio.

8. Kesar pedas are ready to offer Goddess Lakshmi.
