Christmas is a celebration of the birth of Jesus Christ. People decorate Christmas trees, houses with colorful lights, stars. exchange gifts with loved ones. a variety of dishes are prepared during Christmas ......Cake is most important among them. I am posting the recipe of Egg Less Vanilla Cupcake.....It is very simple to bake & delicious. It's good for those who often miss out on cakes because they are made with eggs.


Egg Less Vanilla Cupcake


Ingredients:


For cup cake:


1 cup fine flour
1/2 cup sugar
1 tsp vanilla essence 
1/2 tsp baking soda 
1/2 tsp baking powder
1/2 cup unsalted butter
1/2 cup milk

For frosting:


1/2 cup unsalted butter
1 cup powdered sugar
8-10 black papper
2-3 drop red food colour


Method:


For cup cake:


1. Sift fine flour, baking soda, baking powder & keep aside.

2. Take a bowl, add butter, sugar & mix well.

3. Add milk, vanilla essence & mix well.

4. Now add sifted dry ingredients gradually, beat till smooth & light.

5. Pour this batter into cupcake liners to 2/3 full.

6. Place them into preheated oven for 15-20 mins.

7. Now take them out & allow to cool completely.

8. Decorate the cake as per your choice.

9. Egg less vanilla cupcakes are ready for Christmas.

Diwali the " Festival Of Lights " is the biggest festival of Hindus, celebrated with great  enthusiasm & happiness. On the auspicious day of Diwali people light up diyas, candles, prepare a variety of sweets, draw rangoli, wear new cloths, exchange gifts & sweets, perform Laxmi Puja in the evening to seek divine blessings of Goddess of Wealth, " Devi Laxmi ".

Kaju Katli


A variety of sweets dishes prepared during festival of Diwali. Kaju katli is one of the most delicious, rich, very popular sweet made on the joyous occasion of Diwali. The main ingredients are cashews, sugar, cardamom powder.

Making kaju katli at home is very simple & quick. This exotic dessert makes a delicious treat for this special occasion of Diwali & has a long shelf life..!


Ingredients:


1 cup cashew nuts 
1/2 cup sugar
1/4 cup water
2 tbsp milk powder
1 tsp cardamom powder
Ghee just for greasing
Silver warq  as required ( optional)


 Method:


1. Grind the cashews in a mixer, make a fine powder.

2. Take a bowl add cashew nut powder, cardamom powder,
    milk powder & mix well.


3. Combine sugar & 1/4 cup of water in a non-stick pan & boil
    the syrup until hard crack
 consistency. (Test its consistency
    by putting a drop in a bowl, turn a bowl up side down if sugar
    syrup does 
not drip, means sugar syrup is ready. )

4. Now add cashew nut mixture to sugar syrup & mix well.

5. Lay a butter paper, place the cashew dough & fold butter paper
    such that the butter paper
 is on top & bottom of the dough.

6. Now roll it with a chapathi roller in a circle.

7. Remove the butter paper on top & Spread the silver sheet over
    & cut into diamond shape.



8. Kaju katli is ready for Diwali.

Dahi vada is a popular, yummy & most liked snack in Indian cuisine. Now you can enjoy this delicious snack during fasting days also. I am sharing the recipe of vrat Ka Dahi Vada.....you will surly like it.

Ingredients:


1 cup sago
1 cup Potato boil, peel & mashed
1 tbsp peanut powder
1/4 tsp red chili powder
1-2 green chili chopped
2 tbsp singhda flour
Oil for frying
Salt to taste

For serving:


2 cup  yogurt
1/4 tsp cumin powder
1/4 tsp red chili powder
1/2 cup tamarind chutney
1-2 tsp sugar
Rock salt to taste

Method:


1. Wash & soak sago in 3/4 cup of water for 3-4 hours.

2. Now add sago, potato,salt, red chili powder, peanut powder,
    singhada flour in a big bowl & mix well.

3. Divide the dough in small portions & make balls out of it.

4. Heat oil in a pan,flatten balls & fry them till golden brown form
    both sides.

5. Set them on a paper towel to drain excess oil.

6. Beat yogurt, add sugar, salt, cumin powder & mix well.

7. Place vadas in a plate, pour yogurt & tamarind chutney.

8. Sprinkle rock salt, cumin powder, red chili powder.

9. Garnish with coriander leaves & enjoy.

Navratri is the most celebrated Hindu festival devoted to Goddess Durga. People observe fast during the span of the festival. Various kind of delicacies are made for these days. I m posting the recipe of Falahari Khandvi which can be enjoyed as a light snack on fasting days.

Khandvi is a traditional Gujarati mouth watering snack. It is light on stomach, absolutely delicious, a perfect option for breakfast or evening snack. I am sure you will enjoy the fasting version of this Gujarati delicacy.

Ingredients:


1 cup sabudana (sago) flour 
1/2 cup ararot flour
1/2 tsp cumin seeds
1/2 tsp green chili paste
1 tbsp coriander leaves chopped
Buttermilk as required
4-5 curry leaves
1 tsp oil
Salt to taste

Method:


1. Mix together sabudana flour, ararot, buttermilk, green chili paste,
    salt, make a smooth batter.

2. Pour flour batter to pan, stir constantly so that lumps do not form.

3. Keep stirring till the batter becomes thick, about 10-12 minutes.

4.Take a big plate, spread it thinly with a flat spatula,

5. Gently lift the edge & roll up carefully like a swiss roll.

6. Cut small pieces out of each big roll.

7. Place these on a serving dish.

8. Heat oil in a small pan, add cumin seeds, curry leaves
    & stir for few sec.

9. Pour this over khandvi & garnished with chopped coriander leaves.

10. Falahari khandvi is ready to serve.

Lord Ganesha, one of the most beloved god is considered to be a symbol of good fortune, wisdom, prosperity & wealth. Ganesh Utsav is the festival to worship lord Ganesh & offer "bappa" to his favorite "Modak".

Lord Ganesha is fond of sweets, modak is lord Ganesha’s favorite sweet & is prepared in almost every household.. There are numerous versions of this delicacy like ukadiche modak, fried modak, banana modak, mawa modak, chocolate modak, dry fruit modak, Rava modak & many more.

I am sharing the recipe of Rava modak, i am sure you will like this ......

Ingredients:


1 cup semolina
1 cup powdered sugar
1/2 cup mawa
1/4 tsp cardamom powder
1-2 tbsp milk
1 tbsp cashew nut, almond, pistachio chopped
1/2 cup ghee



Method:


1. Heat ghee in a pan, add semolina & cook till golden in color.

2. Remove from heat & let it cool.

3. Now add mawa, cardamom powder, cashew nut, almond, pistachio
    & mix well.


4. If mixture is dry ,add milk & mix well.

5. Take a portion of the mixture, place it on one side of the modak mold
    & close it
 tightly.

6. Remove excess modak mixture from the edges of the modak mold &
    demold modak.


7. Repeat same process for remaining mixture.


8. Rava modaks are ready for this Ganesh Chaturthi.
