Puran Poli is very popular traditional Maharashtrian dish which is served during the festival & auspicious occasions. This dish is mainly prepared during the Gudi Padwa & Holi.


Puran Poli as the name depicts has two parts...Puran means stuffing & Poli means roti. A roti or poli with delicious, mouth watering stuffing. the stuffing made with chana dal, jaggery, ghee, cardamom powder & the outer part is prepared from whole wheat flour or maida.

The methods of preparing puran poli varies from place to place & people to people. Here i
am sharing the recipe of Shahi Puran Poli Which has saffron & cardamom flavoured chana dal stuffing with richness of cashew nuts, almonds, raisins & nutmeg.

Try this delicious Shiahi Puran Poli recipe on the auspicious day of Gudi Padwa....i am sure  this recipe will make this Gudi Padwa more special.

Ingredients:



For stuffing:



1 cup split chana dal (bengal gram) 

1 cup jaggery grated 

1/2 tsp green cardamom powder 

2-3 tbsp cashew nut powder
5-6 almond finely chopped
2 tbsp desiccated coconut
1/4 tsp nutmeg powder
7-8 strands of saffron soaked in milk
5-6 raisins
1 tbsp ghee 

For dough:

2 cups whole wheat flour
2 tbsp pure ghee
Pure ghee as required
Water as required


Method:


1. Clean, wash & boil chana dal with enough water till done.

2. Drain & coarsely grind it.

3. In a pan add ghee, chana dal, jaggery & mix well.

4. Cook it & keep stirring all time till dry.

5. Add cardamom powder, cashew nut powder, almond, raisins, nutmeg
   powder,desiccated coconut, soaked saffron & mix well.

6. Remove, let it cool. Make 8-10 balls of the stuffing (puran)

7. In a bowl, add flour,2 tbsp of ghee, enough water & make a soft dough.
   Cover it & keep aside .

8. Knead dough & divide it  into 8-10 portions & make a ball out of each
    portion. 

9. Flatten the ball & stuff it with one portion of puran cover & seal edges.
    Dust it with flour & roll out into a thick circle.

10. Cook puran poli on a tawa (griddle) over a medium flame till it turns
      golden brown in color on both sides using ghee. Repeat same with
     remaining dough & filling.

11. Smear a spoon full of ghee on each puran poli, serve piping hot with
      shrikhand.
