Baingan Ka Bharta
(Brinjal Or Eggplant)
Ingredients:
1 baingan (brinjal /eggplant)
1 onion chopped
2 tomatoes finely chopped
1 tsp finely chopped or grated garlic
1 tsp finely chopped or grated ginger
1/2 cup fresh/frozen peas (optional)
1/4 tsp turmeric powder
1 tsp red chili powder
1/2 tsp coriander powder
1/2 tsp garam masala powder
2 green chilies finely chopped
Coriander leaves finely chopped
1 tbsp oil
Salt to taste
Method:
1. Wash, pat dry brinjal, grease it with a little oil, make slits all over the surface.
2. Roast them over open flame or in a tandoor/preheated oven until the skin scorches starts
peeling off & brinjals start to shrink. Let them cool.
3. Remove skin & mash the pulp completely.
4. Boil the fresh/frozen peas (optional)
5. Heat oil in a kadai/pan. Add cumin seeds, when they crackle, add onions & sauté until
translucent.

6. Add ginger, garlic, green chillies, cook for a minute. Add the tomatoes, red chilli powder,
turmeric powder, coriander powder, cook till the oil separates from the masala.
7. Add mashed brinjal & boiled peas (optional), garam masala, salt, mix well & cook for 7-8
minutes over medium heat,
8. Garnish with chopped coriander leaves & serve hot.
