Pineapple Cake

Cake is the dish associated with fun, happiness, enjoyment, celebrations & when the occasion is Christmas then there has to be some thing special. 

I am posting Egg Less Pineapple Cake recipe for this festive occasion. This homemade pineapple cake is almost as delicious as the ones with eggs. 

Pineapple Cake

Pineapple cake has a unique flavour & taste which is wonderful. The cake is very spongy & juicy ...... Enjoy this delicious pineapple cake !!


For cake:

1 cup all purpose flour
1 tbsp finely chopped pineapple
1/2 cup milk powder 
1/2 cup desiccated coconut
1/2 cup sugar
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp pineapple essence
1 tbsp butter
3/4 cup milk

For icing:

2 cups cream chilled
1/2 cup unsalted butter
1 tsp pineapple essence
6 tbsp powdered sugar
1 cup pineapple juice
1 tbsp pineapple slices  
1 tbsp cherry 


For cake:

1. Preheat the oven for 180C for about 10 mins.

2. Heat milk in a vessel, add butter stir it till butter melted.

3. Swich off the heat, let it cool for 5 mins & whip it well.

4. Now grind the sugar to powder, add it to milk & butter mixture, beat it well.

5. Add milk powder, whip again, then add desiccated coconut & whip it well.

6. Sieve all purpose flour with baking powder & baking soda.

7. Gradually add the sieved flour & whip till a thick batter is formed.

8. Now add pineapple essence & peaces, mix well, Pour the batter in cake pot,

9. Bake it in preheated oven for 30-35 mins or till the cake is done.

10. Take the cake out of the oven & let it cool. 

For icing:

1. Take butter, cream, icing sugar & essence in a bowl.

2. Beat them well on slow speed till the batter become very soft.

3. Take the cake & carefully slice it into two halves. 

4. Take the bottom layer & sprinkle the pineapple juice until the entire cake is soaked with it. 

5. Spread the icing cream over the cake top.

6. Place the top layer on the prepared cake, sprinkle the pineapple juice on it also.

7. Spread the cream over the sides & top with a palette knife.

8. Decorated the top of cake with pineapple pieces, cheery or as per your choice.

9. Chill for 3-4 hours. Pineapple cake is ready to serve.
