Singhara Paratha


Shravan/Sawan is the 5th month of Hindu calendar considered highly auspicious for praying to Lord Shiva. Many Hindus observe fasts during the month, especially on Monday. During fasting people only eat certain things, Singhara (water chestnut) atta is one of them. It can be used in different ways as to make poori, halwa, paratha.

Singhara atta is made from dried, ground water chestnuts. it’s quite filling, healthy & gluten free.
 It is a 
good source of potassium, vitamin B and antioxidants. Singhare atta paratha is made in combination with rajgira atta & mashed potatoes. It can be served with potato sabzi & yogurt.

Ingredients:


1 cup singhara (water chestnut) flour 
1 tbsp rajgira flour
1/2 cup potatoes boiled, peeled & mashed
2 green chilies chopped
1/2 tbsp red chili powder
1/2 tbsp cumin seeds
Oil as required
Salt to taste

Method:


1. In a large bowl add singhara flour, rajgira flour, red chili powder, cumin seeds, potatoes,
    green chilies, salt. Mix well.

2. Add little water as needed to knead it into a smooth dough. 

3. Divide the dough into equal portion. Make ball of each part very carefully.

4. Roll them flat into parathas. 

5. Shallow fry it on the griddle or frying pan using oil on both sides.

6. Fry parathas till they trun golden brown on both sides.

7. Delicious singhara parathas are ready.

8. Serve hot with curd, potato sabzi.

Seviyan Kheer or Vermicelli Pudding is one of the very popular & traditional dish in India. It is relished as a special dessert during the month of Ramadan & Eid. Seviyan kheer also known as Payasam which is made for the Tamil new year or the Onam Sadya festivals. 


Seviyan Kheer


Seviyan Kheer is a delicious dessert that is full of texture, flavored with cardamom, saffron & dry fruits. Seviyan Kheer is a very easy & quick recipe. The main ingredients are milk, seviyan, ghee, sugar, saffron, dry fruits, cardamom etc.

Ingredients:


1/2 cup seviyan/vermicelli

1/2 kg milk
1/2 tsp green cardamom powder
1 tbsp ghee
4-5 almond chopped
4-5 cashew nut chopped
2-3 pistachio chopped
5-6 strands of saffron
Sugar to taste

Method:


1. Heat ghee in a pan add seviyan & fry till golden brown.

2. Soak saffron in 2-3 tsp milk.

3. Add milk & let it come to a boil.

4. Cook it till seviyan done.

5. Add nuts, saffron, sugar, cardamom powder & cook it for another 5 mins.

6.Transfer it into a glass bowl, garnish with almond, pistachio, cashew nut.

7. Delicious seviyan is ready to serve.
