Paneer (cottage cheese) bhurji is a popular north Indian recipe made from crumbled paneer. Bhurji means scrambled, so as the name suggests, this cheesy delicacy is made out of scrambled cottage cheese.

The beauty of this scrambled protein rich dish is its simplicity, Flavorful & satisfying. Its not
only
immensely delicious & hearty, its so easy & quick that one minute you put them all together, another minute the dish is almost done. So lets start.

Ingredients:


200 gms paneer crumbled (cottage cheese)
1 big onion chopped  
2 tomatoes chopped
1/2 cup green peas boiled 
2 green chilies chopped
1/2 tsp ginger finely chopped
1/2 tsp red chili powder
1/4 tsp turmeric powder  
1/4 tsp garam masala powder
1 tsp coriander seeds powder
1/2 tsp cumin seeds
2 tbsp coriander leaves chopped
1/2 tsp kasoori methi
1 tsp lemon juice  
1 tbsp oil
Salt to taste


Method:


1. Heat oil in a pan, add cumin seeds, when they crackle, add onion, stir for some time,
    now add ginger & green chilies, fry it for 15-20 sec.

2. When onion turns light brown, add tomatoes, fry till they are soft.

3. Add red chili powder, turmeric powder, coriander powder, stir, add a little water so that all 
    spices are well combined, fry for some time.

4. Now add green peas & stir it.

5. Then add kasuri methi, garam masala, salt, lemon juice & mix well. 

6. finally add crumbled paneer, mix it well so paneer blends into spices.

7. Garnish with chopped coriander leaves & serve hot.

Chatpate moong sprouts is a very easy, yummy & healthy protein rich recipe. Moong sprouts
is specially good for people who does not have much time for cooking or who does not know
much about cooking.

Moong beans, apart from being a good source of protein also contain low levels of fat, cholesterol & sodium. Eating moong sprouts raw often becomes boring, so here is the recipe I relish, hope you will also like it.


Ingredients:


1 cup whole moong
1 onion chopped
1-2 green chilies chopped
1 tbsp coriander leaves
1 tsp red chili powder
1/4 tsp turmeric powder 
1/2 tsp mustard seeds
1/2 tsp cumin seeds
1/2 tsp garam masala powder
A pinch asafoetida
6-7 curry leaves
1 tsp lemon juice
1 cup water
1 tbsp oil
Salt to taste


To make sprouts:


1. Clean, wash & soak whole moong in water for few hours. 

2. Drain  water & keep them wrapped in a wet napkin for a day, sprinkle  water on
    it once or twice. If you want sprouts to grow longer keep them for one more day.


Method:



1. Heat oil in pan, add mustard seeds, cumin seeds, when they crackle, add curry leaves,
    green chili, asafoetida.

2. Add red chili powder, turmeric powder, garam masala  & mix well.

3. Now add  moong sprouts, salt & Mix well.

4. Add water, give just one boil & switch off gas. 

5. Add lemon juice. Garnish with coriander leaves,onions.

6. Chatpate moong sprouts are ready to serve.

Churma laddu is a delicious sweet specially served in the form of prasad on any auspicious 
occasion. Ganesh Chaturthi is incomplete without Lord Ganesh's Favourite Churma Laddus.

It is made of wheat flour, desi ghee(clarified butter), beautifully flavoured with cardamom & 
saffron, dry fruits which just melts in your mouth.

Churma laddu is a traditional Gujarati/Rajasthani sweet which is most used sweet in all
festivals or any occasions. It is a recipe as rich as the history of these states & it is kind
of a multi step process, each step is important & vital to the making of the final perfect
Churma or the Churma 
Laddus.

Churma Ladoo recipe is one of the most delicious sweets you could have & what better
way than to make it for festival of Ganesh Chaturthi.


Ingredients:



200 gms wheat flour 
200 gms ghee (clarified butter)
200 gms powdered sugar
8-10 almond finely chopped
8-10 cashew nut finely chopped
1 tsp cardamom powder
Water as required

Method:


1. Melt 50 gms of ghee & mix it in wheat flour. Make a stiff dough using enough water.

2. Heat remaining ghee in a kadahi.

3. Make small balls with dough & fry them on low flame till  become golden brown. 

4. Grind balls in a food processor to get a fine powder (churma).

5. Now take this powder in a big plate. Add cardamom powder, almond, cashew nut
    & mix well

6. Warm ghee & slowly add it to powder (churma).

7. Keep mixing it evenly with the flour powder by rubbing the mixture between your palms.
    Make sure ghee temperature is manageable.

8. Now add powdered sugar to churma  & mix well.

9. Take a small portion of churma & make a medium-sized ball or laddu out of it.Repeat
     the same with remaining churma 

10. Arrange laddus in a serving plate. 

11. Churma Laddus are ready to offer Lord Ganesh.

1 cup khoya/mava
1/4 cup cashew nut powder
1/4 cup powdered sugar
2 tbsp milk powder
2 tbsp cocoa powder


Method:


1. Roast khoya in a pan till become light brown in colour.

2. Let it cool ,add sugar,cocoa powder,cashew nut powder,
    milk powder & mix well.

3. Grease modak mould & stuff it with modak mixture.

4. Press modak mould , demould modak in a plate.

5.Chocolate modak is ready to offer lord ganesh.
