Singhara Paratha
( Water Chestnut )
Shravan/Sawan is the 5th month of Hindu calendar considered highly auspicious for praying to Lord Shiva. Many Hindus observe fasts during the month, especially on Monday. During fasting people only eat certain things, Singhara (water chestnut) atta is one of them. It can be used in different ways as to make poori, halwa, paratha.
Singhara atta is made from dried, ground water chestnuts. it’s quite filling, healthy & gluten free.
It is a good source of potassium, vitamin B and antioxidants. Singhare atta paratha is made in combination with rajgira atta & mashed potatoes. It can be served with potato sabzi & yogurt.

Ingredients:
1 cup singhara (water chestnut) flour
1 tbsp rajgira flour
1/2 cup potatoes boiled, peeled & mashed
2 green chilies chopped
1/2 tbsp red chili powder
1/2 tbsp cumin seeds
Oil as required
Salt to taste
Method:
1. In a large bowl add singhara flour, rajgira flour, red chili powder, cumin seeds, potatoes,
green chilies, salt. Mix well.

2. Add little water as needed to knead it into a smooth dough.
3. Divide the dough into equal portion. Make ball of each part very carefully.
4. Roll them flat into parathas.
5. Shallow fry it on the griddle or frying pan using oil on both sides.
6. Fry parathas till they trun golden brown on both sides.
7. Delicious singhara parathas are ready.
8. Serve hot with curd, potato sabzi.
