Mathri
Ingredients:
2 cups plain flour(maida)
1/2 cup semolina (rava)
1/2 tsp carom seeds (ajwain)
3/4 cup lukewarm water
Oil to fry
4 tbsp oil
Salt to taste
Method:
1. Mix all the ingredients except the water.
2. Add the water little at a time, kneading into a firm dough.
3. Cover the dough & set aside for 15 minutes or more.
4. Divide the dough into 6-7 equal parts.
5. Take each part of the dough, make a flat ball shape. Roll them into thick circles.
With the help of a sharp knief cut the circle into small diamond shape pieces.

6. Prick the mathri with a fork, so the mathris do not puff when frying.
7. Heat the oil in a frying pan on medium heat.
8. Fry the mathris until both sides are a light golden-brown.
