Carrot Coriander & Ginger Soup
Ingredients:
2-3 carrots chopped
1/2 celery stick
1 tsp garlic chopped
1 tsp ginger - grated
1 onion chopped
1 cup vegetable stock
2 tbsp coriander leaves
Water as required
1/2 cup soya milk
1 tbsp oil
Salt to taste
Method:
1. Heat oil in a large pan add onion, garlic & cook till soft but not turn
brown.

2. Add carrot, ginger & celery, cover pan & cook vegetables for 5
mins.

3. Add coriander, water & vegetable stock & stir well .When it comes
to a boil,reduce heat & simmer until carrots are tender.

4. Lastly add salt, soya milk, season, blend it until smooth & serve hot
