Gujiya
(Chandrakala)
Ingredients:
1/4 cup ghee (clarified butter)
Ghee for deep frying
For filling:
1 cup khoya2-3 tbsp nuts chopped (almonds, pistachios, cashew nut)
1/2 cup coconut grated
1/2 cup powdered sugar
For sugar syrup:
1 cup sugar1 cup water
1 tsp cardamom powder
Method:
1. In a bowl sieve fine flour, add ghee, water & make a smooth dough .keep it aside for 15-20 mins
2. Divide dough into equal size balls.
3. Mix all ingredients for filling in a bowl.
4. Roll each ball into puri & keep aside.
5. Take two puri at a time. Place one tbsp of filling in the mid of one puri & cover
with the other puri. In a pattern & seal firmly. Repeat the same with remaining
dough &filling
6. Add sugar, water & boil it til it reaches one thread consistency. Add cardamom powder.
7. Heat ghee in a pan & deep-fry the chandrakala, on medium heat, till golden brown.
Drain & soak immediately in the hot syrup.
8. When the gujiya are coated on all sides with the sugar syrup, gently remove.
9. Garnish with chopped pistachios,almond & serve
