Dum Aloo is a very popular Indian dish made with baby potatoes cooked in a spicy onion-tomato gravy.

Dum aloo is a royal, exotic delicious main dish cooked through out India. Every part of India has it's own version of the dum aloo.. but kashmiri dum aloo is most famous one.

Dum aloo is the tasty & rich side dish, Just the smell of aloo dam can make you hungry!



Ingredients:



15-20 baby potatoes 

1 pinch asafoetida 

2 onions chopped 
2 tomatoes chopped
1 tsp ginger-garlic paste
1 tsp mustard seeds
1 tsp cumin seeds 
2 tsp red chilli powder 
1 tsp coriander powder 
1 tsp garam masala powder
1/2 tsp turmeric powder 
1 tbsp fresh coriander leaves chopped 
1 tbsp ginger strips
1 1/2  tbsp oil  
Oil to deep fry 
Salt  to taste


Method:



1. Peel, wash & prick potatoes all over with help of a fork. Keep in salted water for 15 mins.



2. Heat oil in a pan, deep-fry potatoes on medium heat till golden brown. Drain & place on an
    absorbent paper.  

3. Heat oil in another pan, add mustard seeds, cumin seeds, asafoetida, stir it for few
    seconds.
    
4. Add onion, sauté for 3-4 mins or till onion turns light golden, add ginger-garlic paste,
    sauté for a minute.

5. Now add tomatoes, cook till tomatoes turn pulpy.

6. Add red chili powder, coriander powder, turmeric powder & stir.

7. Now add fried potatoes, stir to mix well, cook for 2-3 minutes.

8. Add a little water, garam masala powder, salt, mix well & simmer till potatoes absorb
    gravy. 

9. Garnish with coriander leaves & serve hot.

Ven Pongal is a traditional south Indian dish prepared during pongal festival, served as
a special 
dish on auspicious occasions, also offered to god at temples during several
puja/festival days. 
It is a popular dish in south Indian homes & a regular breakfast meal
in south Indian families.This is a dish similar to a khichdi, also known as khara pongal.
This dish prepared with rice & yellow moong dal.Fresh curry leaves & ghee is a must for
this dish.





Ingredients:



 1/4 cup moong dal 
 1 cup rice 
 1 tsp asafoetida
 1/2 tsp cumin seeds
 1/2 tsp mustered seeds
 1/2 tsp black pepper powder 
 1 tbsp cumin powder 
 2 tbsp ghee 
 5-6 curry leaves
 8-10 cashew nut 
 6 cups water
 Salt to taste 


Method:



1. Wash & drain rice, dal together.


2. Heat ghee in the cooker, add mustered seeds, cumin seeds & curry leaves.



3. Now add rice & dal.


4. Fry until the ghee forms a coat over the mixture.

5. Add other ingredients except cashew nuts.

6. Add water & cook it covered.

7. Deep fry cashew nuts.

8. Stir occasionally till the rice gets fully done.

9. Garnish with fried cashews.

10. Serve with sambhar &coconut chutney.

 Rice Kheer is a very popular Indian sweet recipe, you can call it "The King of the Indian
 sweet". Any celebration, traditional function, special occasion, parties, even for day to day  entertaining this dish finds its way into the menu.

This is a very flavorful dish made with milk, rice, sugar, saffron, delicately flavored with cardamom & full of nuts. it is a complete meal & a good source of calcium.

This dish is very simple & easy to make, a great treat can be served warm or cold.



Ingredients:



1 liter milk

1/2 cup basmati rice (washed & drained)
1 cup sugar 
1 tsp cardamom powder
8-10 almonds chopped
8-10 cashew nuts chopped
7-8 skinned pistachio chopped
A pinch of saffron threads, soaked in a little hot milk
5-6 rose petals

Method:



1. Take milk in a pot, bring it to a boil. Reduce flame.


2. Add rice into boiling milk, add cashew nut, almonds, pistachio, stir & boil it. 

3. When rice is soft, add sugar, stir it until sugar completely dissolved.

4. Now add saffron & mix well.

5. Add cardamom powder & mix well, remove kheer from heat.

6. Garnish with dry fruits, rose petals  & serve either warm or chilled.
