Kesar Kaju Katli is a recipe made in every Indian home on the festival of Diwali. Kesar Kaju katli is actually a royal Indian dessert made with cashew powder, sugar syrup & flavoured with saffron. Kesar Kaju Katli is among the most desired dessert gifted to relatives and friends during the festival of Diwali.

This all-time favorite traditional Indian sweet is a quick and easy recipe which you can make at home. Kaju, sugar & saffron just three ingredients you need. Try it ,you will surely love this recipe.

Ingredients:


150 gm cashew nuts

25 gm milk powder

80 gm sugar
5-6 strings of saffron soaked in water
1/2 cup water

Method:


1. Make powder of cashew nuts do not over grind it as the oil released from
    the cashews.

2. Now sieve the powder & the remainder may be grineded in the jar once again,
    & mix the whole thing in one.

3. For sugar syrup take a non stick pan pour sugar in it now add soaked saffron
    & water.

4. Make two string sugar syrup on medium flame.

5. Add milk powder in cashew nut powder & mix well.

6. Add cashew nut & milk powder in sugar syrup & mix well. Make a soft
    dough.

7. Now make a big ball of dough, place the ball on a butter paper/ greased
    plastic sheet.

8. Now using the rolling pin, roll the dough from all sides & make a thick circle.

9. Cut the dough in diamond shape using a sharp knife.

10. Let it cool completely, now gently remove the kesar kaju katli.

11. Kesar Kaju Katli is ready to serve for Diwali.

12. You can store it in an air tight container for 10-15 days in refrigerator.

Ganesh Chaturthi  is one of the very popular  festivals celebrated in India with a great devotion specially in the Maharashtra. This day is celebrated as the birthday of Lord Ganesh,the younger son of Lord Shiva & Goddess Parvati. 

Devotees offer various sweets and savouries to the deity because Lord Ganesha loves 
sweets. Lord Ganapati is very fond of modaks. Modak is believed to be Ganesha's favourite
food. He is also known as "Modakapriya", someone who likes modak.


Motichoor Modak


There are various kinds of modak like Ukadiche modak, mawa modak, chocolate modak, rava modak, churma modak, fried modak, mango modak, malai modak, kesar modak, coconut modak . I am adding one more in this long list of modaks ......"Motichoor Modak" which you can make for Prasad during this Ganesh festival.

Ingredients:


2 cup gram flour (besan)
1 cup sugar
2 cup water
1/4 tsp orange food color
1 tsp cardamom powder 
1 tsp melon seeds
Ghee for frying



Method:


1. Heat sugar with water, orange food color & make sugar syrup with one thread
    consistency.


2. Add cardamom powder to the sugar syrup, mix well & keep it aside.

3. Sieve the gram flour (besan) in a bowl add orange food color & mix well.

4. Now add water little by little & make smooth batter. The consistency should be thick.

5. Heat ghee in a pan make boondis using a perforated laddle. Fry for 2-3 minutes.

6. Now drain the boondi on a kitchen towel, put the boondi in the sugar syrup.

7. Repeat the same procedure for remaining batter. 

8. Add melon seeds to boondis & mix well.

9. Take a modak mould, grease with ghee, fill in boondis. Make into modak shape.

10. Repeat the same procedure & make all modaks with remaining boondis.

11. Keep in the fridge for an hour.

12. Delicious Motichoor Modaks are ready to offer Lord Ganesh.

Stuffed Karela (Bitter Gourd) or Bharvan Karela is a popular north Indian Dish. The recipe
is very easy to prepare, some bitter gourds and few Indian aromatic spices is all that is
needed to make this recipe. Stuffed Karela tastes very delicious. it has numerous health benefits.

Ingredients:



250 gms bitter gourd
3 tsp sugar
3 tbsp coconut powder
3 tbsp peanut powder
2 tbsp beaten yogurt
11/2 tsp red chilli powder
1/2 tsp turmeric powder
3 tsp coriander powder
2 tsp fennel seeds powder
1/4 tsp cummin seeds
1 medium onion chopped
2 tbsp oil
Salt to taste

Method:


1. Wash & wipe bitter gourd.

2. Now using a knife, scrape the skin of bitter gourd. Set the scrapes aside.

3. Make a slit in bitter gourds length wise & remove the seeds.

4. Take the yogurt in a bowl, apply it on each bitter gourd properly. Don't forget to
    apply it inside the each bitter gourd also.

5. Add some yogurt to bitter gourd scrapes also.

6. Keep bitter gourd  & scrapes aside for an hour.

7. After an hour wash bitter gourds & scrapes properly.

8. In a bowl add coriander powder, fennel seeds powder, coconut powder, red chili
    powder, turmeric powder, salt, peanut powder & bitter gourd scrapes. Mix them
    well. Stuffing is ready.

9. Stuff the split bitter gourd with ready stuffing.

10. Now heat oil in a pan, add cumin seeds when cumin seeds crackle, add chopped
      onion add cook it golden brown, now add stuffed bitter gourds, remaining stuffing,
      cover & cook it till done.

11. Transfer the stuffed bitter gourd in serving bowl.

12. Serve it hot with roti or paratha.

Ingredients:


2 big mango chopped 
1 cup cream
1/2 cup mangoes cut in cubs
8-10 mint leaves 

Method:


1. Blend chopped mangoes till smooth.

2. Beat cream till soft & fluffy.

3. Add mango puree to beaten cream & mix well.

4. Transfer mango mousse in serving glasses.

5. Chill it for 30-40 mins in refrigerator.

6. Garnish with mango cubs, mint leaves & serve.

Ingredients:



100 gm Chitle gulab jamun mix
1 tsp cardamom powder
2 cups sugar
2 cups water for sugar syrup
Ghee for deep frying

Method:


1.Take out the Chitle gulab jamun mix in a plate.

2. Now make a soft dough using enough water & keep it aside.

3. Add sugar & water in a deep pan, heat it

4. Stir until sugar dissolves & bring it to a boil. 

5. When it comes to boil add cardamom powder & cook it for 5-6 mins.
    Sugar syrup is ready.

6. Knead the dough & divide it into small equal portions.

7. Take one portion & make round shaped ball out of it, make remaining balls in
     same way.

8. Heat ghee in a pan, add balls one by one in it.

9. Stir it occasionally & deep fry till golden brown on low to medium flame.

10. Drain gulab jamun  & transfer them in a plate, now add them in sugar syrup.

11. Keep them in syrup for at least 2-3 hours for best results, if you are in hurry you
     can serve Gulab Jamun immediately.

12. Transfer Gulab Jamun in a plate, garnish with chopped almonds & serve.
