Karanji is a traditional, popular Maharashtrian rich & delicious sweet prepared during festivals like Diwali, Holi...It is also known as Gujiya in Hindi & Ghughra in Gujarati. 


It is basically a thinly rolled chapati made up of maida (fine flour) which is stuffed with a sweet filling then shaped into a half moon, deep fried until the outer layer is crisp.

In this sweet there are many variations in filling like khoya, semolina, dry fruits, jaggery & many more.  Here i am sharing the recipe of chocolate & nut karanji, in this dish filling is made of khoya, dry fruit & cocoa powder.

Ingredients:


For outer layer:



1 1/2 cups refined flour (maida) 

2 tbsp pure ghee 
Pure ghee to deep fry

For filling:


3/4 cup mawa (khoya) 
1/2 cup powdered sugar 
1 tbsp walnuts chopped 
1 tbsp almonds chopped
1/2 tbsp pistachio chopped
1/2 tbsp cashew nut chopped 
2 tbsp cocoa powder 


Method: 



1. Take refined flour in a bowl. 


2. Add ghee, sufficient water & knead into a medium soft dough. Divide into small balls.

3. For stuffing mix mawa, powdered sugar, walnuts, almonds, pistachio, cashew nut &
    cocoa  powder in a bowl & mix. Chill it in the refrigerator for about 10 mins. 

4. Roll out the dough balls into small round puris. Place a puri on the worktop, dampen its 
    edges.

5. Place some stuffing in the center & fold one side over the other. Press edges to seal &
    further twist them with your finger tips in a decorative manner. You can also make the
    karanjis using a mould.

6. Keep them in the fridge for sometime.

7. Heat sufficient ghee in a kadai/pan.

8. Deep fry the karanjis, till light brown.

9. Drain & place them on an absorbent paper. 

10. Karanjis are ready.

Chakli


Chakli a very popular snack usually made during festive season in every house specially in Maharashtra. Diwali feast is almost incomplete with out this home made savory, crispy dish.


Chalki


Every one has their own method of preparing this crunchy snack & the end result is a delicious product. Ingredients required include rice, moong daal, urad daal, chana daal, chili powder, cumin seeds, sesame seeds, oil & salt.


Chakli


Nothing can beat the taste of home made chakli. A must try recipe!! 


Ingredients:


For chakli atta (flour):


6 cups rice 
3 cups chana dal (bengal gram)
1 1/2 cups dhuli urad dal (black gram skinless)
3/4 cup dhuli moong dal (green gram skinless)
2 tbsp coriander seeds

For dough:


3 cups chakli ka atta 
1/4 tsp turmeric powder 
1 tbsp red chili powder 
1 tbsp oil for dough
2 tbsp sesame seeds 
1 tsp cumin seeds
Oil to deep fry
Salt to taste

Method:


For chakli atta (flour):


1. To prepare chakli atta, roast the dals & rice separately on a low flame.

2. Mix the dals, rice & coarsely grind them. Chakli atta (flour) is ready.

For chakli:


1. In a bowl take chakli atta, add red chili powder, turmeric powder, sesame seeds, cumin  
    seeds, salt & mix well.

2. Then add oil & mix well now adding a little water knead a very soft dough.

3. Leave it aside for 25-30 minutes.

4. Put dough in chakli mould, make chaklis on a piece of paper.

5. Heat sufficient oil in a pan till moderately hot. 

6. Deep fry chaklis to a light golden brown & crisp.

7. Drain on an absorbent paper & allow to cool.

8. Store chaklis on airtight container.

Besan Sev is a  spicy, deep fried savory & snack made during Diwali. It is one of very popular snack that you can find all over India, even in a little tea shops in villages.This crispy, crunchy & yummy namkeen also enjoyed as a topping for various chaats or a plain snack with a cup of tea.

The main ingredients are chickpea flour & various spices like black pepper, red chili powder, crushed cloves, carom seed & asafoetida. 


Besan Sev


Besan sev is quite simple to make. This can be made fresh in your own kitchen within literally half an hour. It’s healthy, tasty & crispy plus you can make them how much you want.


Ingredients:



2 cup chickpea flour (besan) 
2 tsp red chili powder
1 tsp carom seed (ajwain) 
2 tbsp hot oil
4-5 cloves (crushed) 
Pinch of asafoetida
Oil to deep fry
Salt to taste


Method:



1. In a large bowl add besan, red chili powder, carom seeds, cloves, asafoetida, salt & oil.
    Rub everything between palms to get sand like consistency.

2. Slowely add water & make a soft, smooth dough. Keep it aside for 10-15 mins.

3.  Heat oil in a pan while oil is heating up, take the sev maker & use the disc as per your     
     choice. Grease the inside of sev maker & fill  with dough. 

4. Press the maker over oil as soon as sev fall slowly move the maker in a circular motions
    so that they do not stick together.

5. Let the sev fry till it become golden in color.Take it out from the hot oil over the paper napkin.

6. Do the same process with the remaining dough.

7. When sev cool downs completely, store it in air tight container. 

8. Enjoy the crispy besan sev.

Coconut Burfi is a classic & traditional recipe of an Indian sweet that is prepared during festivals & special occasions like Diwali. It is a simple yet tasty sweet which can be made easily at home.





The coconut powder mixed with sugar & ghee, blended together in the burfi. So sweeten up your Diwali with this tasty & healthy dish.



Coconut Burfi



Ingredients:


1 cup grated coconut

3/4 cup sugar 

2 tsp ghee
1/4 tsp cardamom powder 
10-12 strends of saffron soaked in milk
4-5 almond

Method:


1. Heat ghee in a pan. Now add coconut powder, sugar, Simmer & keep on stirring so
    that the mixture does not stick to the bottom of the pan.

2. Coconut burfi mixture will start thicken slowly.Add cardamom powder, saffron & mix well.

3. Cook it till coconut mixture starts leaving sides of the pan.

4. Pour coconut mixture in a greased tray & garnish with almond.

5. When it cools cut it into square or in shape as per your choice.

6. Coconut burfi is ready for Diwali.
