There are countless versions of mango pickle in India with each region having its own host of recipes. Almost every Indian household has their own favorite recipes for mango pickle. Here
is a flavorsome mango pickle recipe that is perfect accompaniment to any food.


Ingredients:



1 kg raw mangoes

6 tbsp mustard seeds

3 tbsp fennel seeds (saunf)
6 tsp red chilli powder or as per taste
1 tsp turmeric powder
1/2 tsp asafoetida
2 cups mustard oil
6 tsp salt

Method:


1. Wash & wipe mangoes dry. Cut them into half, remove seed & then cut cubes. Put pieces
     in a bowl.

2. Grind fennel seeds, mustard seeds to a coarse powder & take it out in a bowl.

3. Now add asafoetida, red chili powder, turmeric powder, salt & mix it well.

4. Heat mustard oil in a pan to smoking point, remove & let it cool. Mix half of oil with coarsely 
    ground powder. Add this to mango pieces. 

5. Mix well to coat  mango pieces.  Allow it to stand for 3 days. On the fourth day transfer it into
    a porcelain jar, add  remaining oil & mix well. 

6. Cover jar with muslin cloth, tie with a string & let  pickle mature for 8 to 10 days in sun.
     Remember to mix the contents at least once a day.

7. You can start using the pickle now. It lasts for one year.

1 banana

1 cup milk
1 cup crushed ice

Method:


1. In a blender, combine banana, chocolate syrup, milk, crushed ice & blend until smooth.

2. Pour in glass, garnish with grated chocolate & coco powder.

3. Serve chilled.

Shrikhand is a yogurt based extremely popular indian sweet dish, but now it is popular all over the Indian subcontinent. Made from yogurt shrikand has a creamy, semi soft consistency & is slightly yellowish in color.

Shrikhand is a classic dessert where plain yogurt is transformed into a melt-in-the-mouth delicacy. This dish is combination of yogurt, sugar, saffron & dry fruits. Shrikhand is an
ideal summer time 
dessert always served chilled.

It is one of the main desserts in Maharashtrian & Gujarati cuisine. Preparation of this dish is very simple. there are so many variation available in shrikahnd like kesari, kesar pista, mango, strawberry etc. A popular variation of shrikhand in Maharashtra is Amrakhand, which is shrikhand blended with mango pulp. 


Ingredients:



1 kg yogurt

10-12 strands of saffron (kesar) 

2 tbsp milk
5-6  almonds finely chopped
5-6  pistachios finely chopped
5-6 cashew nuts finely chopped
1/2 tsp green cardamom powder 
1/3 cup sugar


Method:


1. Hang yogurt in a muslin cloth until all liquid from yogurt has drained off.
    (Approximately 3 hours). Soak saffron in milk. Add sugar in yogurt & mix will.
2. Now transfer thick yogurt along with sugar over muslin cloth, in small quantities.

3. Rub above mixture firmly over cloth, till whole mixture is sieved.

4. Add saffron in sugar mixed strained curd & mix well.

5. Transfer it to a glass bowl. Add almonds, pistachios & green cardamom powder
    & mix well. 

6. Refrigerate prepared shrikhand for 2-3 hour. 

7. Garnish it with almonds, cashew nuts & serve chilled.

This juice is a very good source of Vitamin C. Orange juice is a nutrition powerhouse with naturally occurring vitamins, minerals & many antioxidants.

Ingredients:



7-8 oranges

Sugar to taste
Water as required

Method:


Squeezing orange juice by hand:


1. Tightly squeeze or roll oranges firmly with palm across counter/table to soften them up.

2. Cut orange in half & remove seeds.

3. Grip orange halves tightly, squeeze it by hand, using a plain juicer to coax all the juice out.
     Add sugar & mix well.

4. Pour juice through a strainer to make it clear & remove seeds if any remained.

5. Enjoy a glass full of freshly squeezed orange juice.


Making orange juice with a blender or food processor:


1. Peel oranges, then cut into chunks & removes seeds.

2. Put the oranges in the jar of blender or food processor.

3. Pulse a few times to break up the oranges.Then process continuously until the
    oranges are pureed.

4. If it is too dry, add some water.

5. Run the blender again. Add sugar & run until it is liquefied. 

6. Pour juice through a strainer to make it clear or you can take it with out straining of
    you like it with pulp.

7. Enjoy fresh orange juice.
