Beetroot Soup


Ingredients:



250 g cooked beetroot, peeled & chopped 
1 medium carrot, peeled & chopped 
1 small onion, peeled & chopped 
500 ml vegetable stock
2 tsp olive oil 
3 sticks celery 
Salt & pepper to taste 



 Method:



1. Heat olive oil in a  heavy bottom pan & fry chopped onion until
    it become soft & translucent.


2. Add vegetable stock, carrot ,celery &  bring it to a boil.

3. Cook other ingredients until they are soft.

4. Add cooked beetroot ,salt, pepper,simmer it & cook for another
     2-3 mins.


5. Use a food processor or hand blender & make a smooth soup. 

6. Serve hot beetroot soup.
