Amritsari Aloo Kulcha
( Potato kulcha )
Ingredients:
2 cups maida (fine flour)
1 tsp baking powder
1/2 tsp baking soda
1 tsp sugar
2 tbsp oil
1/4 cup yogurt
1/4 cup warm milk
Oil/butter to fry the kulcha
Salt to taste
For Stuffing:
1 cup potatoes cooked & mashed
1 onion finely chopped
2-3 green chili chopped
1 tsp cumin seeds
1/2 tsp fennel seeds
1/4 tsp chaat masala
1 tbsp coriander leaves chopped
Method:
1. Mix flour, baking soda, baking powder, oil, yogurt, sugar & salt in
a bowl, add gradually warm milk & turn everything as a soft but
not a sticky dough, cover bowl with a damp cloth, keep aside
for an hour.

2. Take mashed potatoes, finely chopped onions, chopped green
chilies, red chilly powder, cumin powder, chaat masala, coriander
leaves in a bowl, mix everything & make 4 equal medium sized
balls.

3. Now flatten a portion of dough, place a spiced potato masala balls
in center, fold dough to form a ball, dust dough with flour & gently
flatten them as round disc.

4. Heat a tawa, put few drops of oil/butter, gently drop flattened kulcha
& cook on both sides until kulcha turns golden brown.

5.Serve hot kulchas with thick yogurt or Punjabi chole.
