Chole Tikki
Ingredients:
For tikki:
3 tbsp bread crumbs
1 tbsp freshly chopped coriander
1 tsp red chili powder
1/2 tsp garam masala
1/2 tsp fennel seeds
2-3 green chili finely chopped
Salt to taste
For chole:
1 cup kabuli chana
1 big onion chopped
2 big tomato chopped
1 tea bag
1/2 tsp soda bi- carb
1/2 tsp cumin seeds
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
1 tsp chole masala
1 tsp coriander powder
1 tsp ginger & garlic paste
1 tsp coriander leaves
1 tsp dried mango powder
1 tbsp oil
1 cup water
Salt to taste
For garnishing:
1 tbsp nylon sev
1 tbsp yogurt
1 finely chopped onion
Green chutney
Tamarind chutney
Chat masala
Method:
Tikki:
1. Pressure cook potatoes till done.
2. Peel & mash potatoes well.
3.Now add bread crumbs,red chili powder,fennel seeds,salt,garam masala,green
chili.coriander leaves & mix well.

4. Make equal size small balls of potato mixture & then press it to flatten a bit.
5. Heat a non-stick pan, drizzle some oil, place 5-6 tikki & cook them on medium flame.
6. Cook tikkis till light brown from both sides.
Chole:
1. Soak kabuli chana over night.
2. Pressure cook them with tea bag & soda bi-carb for 4-5 whistles or until they are
soft.Discard tea bag & keep it aside.

3. Hea oil in a pan, add cumin seeds. When seeds crackle, add onion, ginger
garlic paste & saute till onion become golden brown.

4. Add tomato,chole masala, red chili powder, garam masala, dry mango powder,
turmeric powder,coriander powder, salt & saute for some time

5. Add kabuli chana,coriander leaves & some water & mix well. Simmer for 10 to 15
minutes.

How to serve:
1. Place potato tikis on serving plates & top with some chole.
2. Now add some curds, green chutney & tamarind chutney on top.
3. Sprinkle sev, coriander, chopped onion,chat masala & serve immediately.
