Dudhi Muthiya
(Bottle Gourd)
Ingredients:
2 cups grated bottle gourd (dudhi)
1/2 cup whole wheat flour
1/2 cup whole wheat flour
1 cup semolina
1/2 cup gram flour
2 tsp ginger-green chili paste
1 tsp lemon juice
1 tsp sesame seeds
1 tsp red chili powder
1/2 tsp turmeric powder 1/2 tsp cumin seeds
1/2 tsp fennel seeds
1/2 tsp asafoetida
1/2 tsp mustard seeds
2 tbsp chopped coriander
2 tbsp oil
2 pinches of soda bi-carb
Salt to taste

Method:
1. Squeeze out excess water from grated bottle gourd.
2. Combine bottle gourd, whole wheat flour, semolina, gram flour, ginger-green chili paste,
turmeric powder, red chili powder, cumin seeds, fennel seeds, lemon juice, coriander, soda
bi-carb, asafoetida, salt & 1 tsp of oil in a bowl.

3. Mix well & knead into a soft dough adding water as required.
4. Divide dough into 4-5 equal portion, shape each portion into a cylindrical roll.
5. Arrange rolls on a greased sieve & steam for 20 mins.
6. Remove, cool slightly, cut into slices & keep aside.
7. For the tempering, heat remaining oil in a non-stick kadhai & add mustard seeds.
8. When seeds crackle, add sesame seeds, asafoetida & sauté on a medium flame for
a few seconds.
9. Add muthiya pieces, sauté on a medium flame for 2-3 minutes or till they turn crisp.
10. Serve hot with green chutney or tomato ketchup.
Would love to try out this recipe. I keep repeating the same style of cooking for bottle gourd and am glad to see a new version. Fabulous and interesting flavored side dish.
