Idli Sambhar
Ingredients:
For idli:
1 cup urad daal (white)
1 1/2 tsp salt
Oil for greasing
Water as required
For sambher:
6-8 drumsticks pieces
1 tsp mustard seeds
1 tsp fenugreek seeds
6-7 curry leaves
1 pinch asafoetida
2 tbsp sambhar powder
2 tbsp pumpkin finely chopped
5 small sized madras onions
1 tbsp tamarind
1 tbsp chopped coriander
2 medium tomatoes chopped
2 tbsp oil
Salt to taste
Method:
For sambhar:
1. Wash dal & pressure cook dal in 2 cups of water until soft & blend it.
2. Boil pumpkin with drumsticks & onion in 1 cup of water.Drain & add to dal.
3. Soak tamarind for 30 minutes in little water. Rub tamarind by hand
& strain. Add this mixture to dal.

4. Heat oil,add mustard & fenugreek seeds when they crackle add curry leaves
& fry for 2-3 mins.

5. Now add asafoetida, sambhar powder, tomatoes coriander& stir for some time,
add cooked dal mixture & boil for 5 mins.

6. Add salt & let it boil for 5-7 minutes. Sambhar is ready
For idli:
1. Wash & soak rice & urad dal in water overnight.
2. Drain, wash them & grind to a smooth paste.
3. Cover & keep aside 12 hours to ferment.
4. Add salt & mix well.
5. Put spoon ful of batter into greased idli moulds & steam for 10 mins.
