Chana Dal Paratha
(Bengal Gram Dal)
Ingredients:
2 cups refined flour
1 cup split bengal gram dal
1/2 tsp mustered seeds
1/2 tsp cumin seeds
1/4 tsp turmeric powder
1/4 tsp asafoetida
1 tsp coriander powder
1 tsp red chili powder
1/2 tsp garam masala powder
2-3 tbsp oil
Salt to taste
Method:
1. Combine refined flour, salt & 1 tbsp of oil.
2. Add sufficient water, knead into a soft & smooth dough. Cover with a damp cloth & rest
dough for some time.

3. Pressure cook chana dal with two cups of water & salt till two to three whistles. Open lid
when pressure reduces & allow to cool.

4. Grind dal to a coarse paste.
5. Heat oil in a pan. Add mustered seeds,cumin seeds when crackle add asafoetida, coriander
powder, red chili powder & turmeric powder garam masala powder. Sauté for some time.

6. Add dal paste. Cook for 3-4 minutes or till dry.
7. Remove from heat & allow it to cool. Divide into equal portions & set it aside.
8. Divide dough into equal portions & roll into balls.
9. Spread each dough portion in your palm to a small puri, place a portion of stuffing in
center, gather up the edges & shape into a ball again.

10. Press lightly on tabletop. Roll out into a parantha dusting with flour if needed.
11. Make other paranthas in the similar way.
12. Put the paratha on a tava, cook for a few minutes using oil. Turn over on the other side & cook again until crisp.
13. Serve hot with curd.
