Dal Ki Puri
Ingredients:
For Dough
1 cup wheat flour
1 tbsp oil
Water as required
1/4 tsp salt
For Filling
1/2 cup moong dal
1 tbsp ginger garlic paste
1 green chili chopped
1/4 tsp mustard seeds
1/4 tsp turmeric powder
1/2 tsp red chili powder
1/4 tsp garam masala
1/4 tsp coriander powder
1/4 tsp fennel seeds
1/2 tsp cumin seeds
1/2 tsp mango powder
1/4 tsp asafetida
2 tsp oil
Oil to deep fry
Salt to taste
Method:
medium soft dough.
2. Cover the dough, keep it for 30-35 mins.
3. Wash & soak moong dal for 3-4 hours. Drain water, blend dal to coarse
paste.
4. Heat oil in a pan, add mustard seeds,fennel seeds, cumin seeds, while
crackle, add ginger garlic paste, red chili powder, turmeric powder,
coriander powder, salt, garam masala, mix well.
5. Now add dal paste, mix well. Put the lid on and cook on a low flame for
5-10 mins or till the paste becomes dry.
6. Knead the dough for a minutes, Divide it in small equal balls.
7. Take one ball of dough, flatten the edges of ball with your fingers &
make a small circle.
8. Keep one portion of stuffing in center of circle, bring edges together to
seal it well.
9. Now by applying pressure with fingers press the edges down, make a
ball of it, also make sure there are no cracks.
10. Grease the rolling pin & rolling surface. Roll the ball gently into 5-6
inches circle.
11. Repeat the same with remaining dough & filling.
12. Heat oil in a pan, deep fry puris till golden brown from both sides.
