Ingredients:
For cover:
1 cup all purpose flour (maida)
2 tbsp oil
1/4 tsp carom seeds (ajwain)
Salt to taste
Water as required
For stuffing:
3-4 Potatoes boiled, peeled & mashed
1/2 cup green peas boiled
1/4 cup cabbage finely chopped
1/4 cup carrot finely chopped
1-2 green chilies finely chopped
1/2 tsp Ginger crushed
1/2 tsp dry mango powder
1 tbsp coriander leaves
1 tsp red chili powder
1/2 tsp garam masala
1/2 tsp turmeric powder
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1/2 tbsp oil
Salt to taste
Method:
For cover:
1. Mix all the ingredients except water.
2. Knead a soft by adding enough water.
3. Cover it with muslin cloth, keep aside.
For stuffing :
1. Heat oil in a pan, add mustard seeds, cumin seeds,stir it, add green chili,ginger, red chili
powder, turmeric powder & mix well.
2. Now add potatoes,carrot,cabbage,green peas,garam masala,coriander leaves, salt, dry
mango powder & mix well, cook for 1-2 mins. Let it cool.

For samosa :
1. Knead the dough & divide into equal portion & make a small ball of each portion.
2.Take a ball of dough & roll it into a circle.
3. Cut it into two parts like semi-circle.
4. Now take one semi circle, fold it like a cone. Use water while doing so.
5. Place a spoon of filling in the cone, seal the cone using water.
6. Heat oil in a pan, deep fry samosa on medium flame till golden brown.
7. Serve hot samosa with green/tamarind chutney/sauce.
